At the end of September, the grapes are harvested entirely by hand and transported to the winery in small crates. A rigorous selection process follows, leaving only the finest grapes. These are gently pressed, after which fermentation begins in concrete tanks. Afterward, the wine is transferred to large barrels where it ages for a full 12 months. The barrels are lightly toasted, allowing the wine to develop more character. Finally, the wine is aged in the bottle for several more months before release.
