Primo Pacenti founded Azienda Agricola Canalicchio di Sopra in 1962. The estate is located in the northern part of the municipality of Montalcino. The winery occupies approximately sixty hectares of land, of which 15 hectares are planted with vineyards and 2 hectares with olive groves. For three generations, wine has been produced with great passion and expertise, using the latest technologies with respect for traditions and nature. The vines are planted in two distinct zones of Montalcino: Canalicchio di Sopra and Le Gode di Montosoli. The differences in location and soil create different types of Sangiovese, which are carefully blended in the cellars to create a beautiful result.
The grapes are harvested entirely by hand and then undergo a rigorous selection process. After pressing, alcoholic fermentation takes place in stainless steel vats under controlled temperatures, with daily pumping. This is followed by maceration on the skins for 15 to 20 days. Finally, the Canalicchio di Sopra Rosso di Montalcino is aged for another twelve months in 50 hectoliter (50%) Slavonian oak barrels and French oak barrels. After bottling, the wine is aged in the bottle for a further four months.
That's what makes it special; you can smell and taste that the wine has rested. The aroma is refreshing, fruity, and spicy with elegant notes of cherry and berry. The palate of this Canalicchio di Sopra Rosso di Montalcino is full and soft with velvety tannins and a long, intense, and aromatic finish.
