Vineyards and region
The hilly south of Rheinhessen is the home of this family estate.

Location / origin: This Grauburgunder comes from the German wine region of Rheinhessen and belongs to the Gutsweine, the estate wines of Weedenborn. The winery is based in Monzernheim, in the Wonnegau, close to the vineyard slopes of Westhofen.

Soil: Calcareous soils characterise the area around Monzernheim and Westhofen. The estate's vineyards connect here to the same hillside landscape that also contains the well-known Westhofen vineyards.

Climate & influences: The higher-situated plots around Monzernheim benefit from cooling winds. As a result, ripening here occurs more gradually than on the lower-lying slopes near Westhofen, which is favourable for the development of aromas while maintaining freshness.
Vinification and ageing
Skin contact before pressing and malolactic fermentation give the wine its aromatic depth and soft structure.

Harvest & processing: The grapes are hand-picked, destemmed and lightly crushed. Afterwards, juice and skins remain in contact for about 18 hours before the must is pressed. During this skin maceration, additional aromatic components are released from the grape skins.

Malolactic fermentation: After alcoholic fermentation, the wine undergoes malolactic fermentation. During this process, the sharper malic acid is converted into softer lactic acid, which contributes to a round mouthfeel.

Ageing / wood maturation: The majority is aged in stainless steel tanks, a smaller portion in wooden barrels. Extended time on the fine lees provides extra texture and cohesion. This ensures the fruit remains prominent while simultaneously giving the wine its characteristic creaminess.

The German name refers to a familiar grape from the Pinot family.

Grauburgunder, also called Pinot Gris – Rheinhessen: This grape can develop a broad mouthfeel and ripe fruit aromas. At Weedenborn, this character is given a dry, juicy expression, in which apple and pear fruit combine with sufficient acidity for a fresh balance.
Tasting notes and serving tips
The nose opens with ripe apple and pear, complemented by fresh brioche and a fine spiciness. The dry palate is full and supple, with a creamy texture and fresh, beautifully integrated acidity. Fruit and soft spiciness remain pleasantly present in the finish.

Serving temperature: Serve at 8–10 °C, so the fruit remains fresh and the soft texture is beautifully showcased.

Dishes: Serve with pan-fried pike-perch, chicken with a light mushroom cream sauce, tagliatelle with courgette and ricotta, or a leek quiche. The combination of juiciness and roundness goes well with these soft, savoury preparations.

Gerstl — 17+/20 — 2025 vintage: In his personal tasting review, the Swiss wine specialist appreciates the ripe yellow fruit, the pear and the fine spiciness. The juicy acidity and the interplay of fruit intensity and freshness are particularly noteworthy.

Gesine Roll grew up in Monzernheim, where her father Udo Mattern laid the foundation for Weedenborn's later specialisation in Sauvignon. She herself followed a winemaking education at Bassermann-Jordan in the Pfalz. The precise working methods of cellar master Uli Mell made a great impression on her there; a work placement at Vergelegen in South Africa subsequently deepened her interest in French-inspired wine styles. On the family estate, she developed her own approach in which refinement and carefully dosed wood take centre stage. Falstaff distinguished her as Winemaker of the Year in the Weinguide Deutschland 2024. In addition to Sauvignon Blanc, the Burgundy varieties, including this Grauburgunder, also have a permanent place in the range.
