Looking for pure, unpolished Saperavi with intense dark fruit and elegance? Winery 97 perfectly captures the energy of Kakheti in this Unfiltered: full-bodied, silky tannins, and a long, convincing finish.
Vineyards and region
The grapes come from a select 7-hectare vineyard in Ikalto, in eastern Georgia. Kakheti, the birthplace of Saperavi, produces ripe, deeply colored fruit that retains a fresh backbone, ideal for a modern, clean style without oak influence.
Vinification and maturation
Harvested by hand, then macerated on the skins for 10 to 14 days and fermented in neutral stainless steel. The wine remains in stainless steel for aging, on selected yeasts, and is bottled unfiltered. What does unfiltered mean and what does it taste like? Unfiltered bottling preserves the natural texture and aromatic intensity, making the dark fruit fuller and the finish longer. Serve at 14 to 18 degrees Celsius. Alcohol 13 percent.
Grape composition
Saperavi 100% from Ikalto, Kakheti. Saperavi is a teinturier, a grape with dark-colored juice, known for its deep color, ripe black fruit, and natural structure that can be elegant when vinified in stainless steel.
Tasting notes and serving suggestions
Deep ruby red. The aroma offers intense notes of blackberry, black plum, and wild berries. The palate is full and precise, with elegant tannins, a lively core, and a long, clean finish. Pair with roasted or grilled meats, steaks, spicy Asian dishes, and hard cheeses like Gouda or Parmigiano.
