18 months of wood aging for Perdeberg Cellar Dry Land Collection Resolve Pinotage
Perdeberg Cellar Dry Land Collection Resolve Pinotage is a wine originating from the fertile vineyards of the Paarl region. The grapes for this wine are hand-harvested from two vineyard blocks, one 13 years old and the other 26 years old. Harvest takes place early in the morning, when temperatures are still cool, to preserve the optimal quality of the grapes. At the winery, the berries undergo a two-day cold maceration, which extracts the characteristic aromas and colors of the skins. Fermentation takes place in stainless steel tanks for five days. This Pinotage is made in a rich and complex oak style. After fermentation, the wine was aged for eighteen months in French and American oak barrels. The barrels were a combination of new and old, with approximately thirty percent of the barrels being new. This oak aging adds depth, structure, and complexity to the wine. After bottling, the wine was aged for another twelve to eighteen months to further develop its character. The aromatic palette of Perdeberg Cellar Dry Land Collection Resolve Pinotage
The bouquet is inviting, revealing a distinctive spiciness with notes of fresh cherries and strawberry liqueur. This aromatic combination offers an attractive and complex aroma. Upon tasting, the wine's fruit and charisma are fully revealed. The palate is characterized by abundant fruity notes, dominated by ripe cherries and juicy strawberries. This fruity expression is supported by a lush tannin structure, which will evolve over the coming years, giving the wine greater depth and texture.Product details
