Because these vines are "vine-aged," the yield is low, but the quality is very high. These select vineyards are planted in the perfect location, allowing all the factors needed for the grapes to mature smoothly. When the grapes are perfectly ripe, the winemaker will signal the start of the manual harvest. This harvest begins mid-night. This ensures the grapes are still dormant, minimizing damage during transport to the winery.

7 months of maturation in oak barrels for this Vignes de Nicole

Vinification takes place separately for both grape varieties, after which the final blend is created. The wine will mature for seven months in the Paul Mas cellars in French oak barrels. Some of these oak barrels are new, giving this delicious red wine some extra oomph. After bottling, the wine continues to mature in the bottle for several months before being released by the winemaker. The winemakers at Paul Mas share the same goal of producing only the finest wines. This is only possible through constant innovation and a commitment to nature.
