Orion demonstrates the refinement of Primitivo from Salento. You get ripe, dark red fruit with a spicy glow and just the right amount of freshness to keep the glass vibrant. The grapes are hand-harvested and rigorously selected, ensuring only the perfect fruit makes it into the cellar.
The grapes come from Puglia, Italy, in the Salento region. The warm south yields cherries and plums with depth, while the evening sea breeze cools the wine and preserves its freshness. This creates a full-bodied style with balance and length.
Hand-harvesting in late August and early September into small crates, followed by a second manual selection in the cellar. Fermentation takes place at 27–31°C with careful pumping-in and pumping-over. What is délestage and remontage? Délestage is the temporary decanting of young wine to allow the skins to break down and allow for gentle extraction, while remontage is the pumping back over the skins to enhance color and aroma. After malolactic fermentation, the wine is aged for six months in 225-liter French barriques.
