The Albarino grapes are harvested entirely by hand and transported to the winery in small boxes. A rigorous selection process follows, leaving only the very best grapes. After this selection process, the grapes are pressed and fermented in a controlled manner at 15 degrees Celsius. Everything is designed to achieve rich and intense aromas. A second fermentation in the bottle at 12 to 13 degrees Celsius follows, along with aging on the lees. This extensive process creates a sparkling Albarino with a unique character.
