The vineyards of La Doncella de las Vinas are known for their coolness, as they lie at an altitude of 1,100 meters above sea level. The cool climate, with its strong winds and sharply falling nighttime temperatures, results in a very slow ripening process. This allows the Chardonnay bunches to draw abundant nutrients from the rich soil structure, and the taste reflects this. The Chardonnay grapes also receive ample sunshine, creating a perfect blend of freshness and ripeness. After a long ripening period, the harvest is partially hand-harvested and transported in crates to La Doncella de las Vinas.
After harvest, all the bunches are inspected again at La Doncella de las Vinas to ensure that only the finest bunches make it into the bottle. Fermentation takes place at a low temperature, extracting every last drop of energy from the bunches. The result is a full-bodied Chardonnay, this La Doncella de las Vinas.
