The selection of ripe fruit forms the starting point for this cuvée.
- Location / origin: The grapes come from Australia and can be sourced from various wine regions. By processing batches separately, the winemaker can later blend them to achieve the desired style.
Skin contact and oak aging give the wine its color, structure, and spicy accents.
- Fermentation: The grapes ferment for 7 days with the skins before being pressed. During this contact, pigments, aromas, and tannins are released, which form the foundation for the full flavor.
- Maturation: This is followed by 6–9 months of maturation in used oak barrels. The wood guides the development of the wine and adds soft spiciness to the ripe fruit.
The dark fruit aligns with the recognizable character of this grape.
- Shiraz – Australia: Shiraz gives the wine its ripe berry and plum character. The grape can provide deep color and a full structure; here, that strength results in a supple finish.
