1980 was a good year, with the Pedro Ximenez grapes able to ripen and dry perfectly. The latter is crucial for the sweet character. From harvest to raisin production, nothing is left to chance, and the winemaker at Toro Albala keeps a close eye on everything. Perhaps that is precisely the success of this winery. In this case, it results in a sweet and elegant wine.

The sweet wines of Toro Albala

The Toro Albala winery, named after its founder, was established in 1922 in the Montilla Moriles region. It was the first winery to sell sweet dessert wines. Approximately 30 percent of the grapes come from their own vineyards, with the remaining 70 percent coming from partner growers. The wine cellar, with approximately 6,000 barrels, is located in the underground tunnels. They are experts in the Pedro Ximenex grape, which also plays a key role in the wine. The 100% Pedro Ximenex grapes are dried into raisins after harvest to develop their sweet character. The grapes are then gently pressed and rested for at least 12 months. Finally, the wine is transferred to American oak barrels where it ages for an impressive 20 years. This results in an exclusive wine that is more than worth the wait.

This Convento Seleccion 1980 first appears in the glass with a beautiful dark brown color. The aromas leap out of the glass. Dried grapes, plums, and dates predominate, complemented by sweet notes of cinnamon and biscuit. Lemon and woody aromas also complement the nose. The palate is balanced, pleasantly sweet with a touch of tartness, and it continues into a slightly bitter yet elegant finish. Ideal with a cheese board or a delicious complement to a chocolate dessert.
