Vineyards and region

Les Allots lies at the foot of the higher-lying premier cru parcels, on a gently sloping slope with a mix of red clay and chalky scree, which ensures good drainage and a pronounced mineral note. The vineyard is small, approximately 0.83 hectares, planted with Pinot Noir vines that are between 30 and 60 years old, producing few but highly concentrated grapes. The name Les Allots is said to derive from "à l'eau," a reference to former humid conditions that, through clever drainage and good vineyard management, have been transformed into a healthy, well-draining parcel. The estate employs traditional Burgundian vineyard techniques such as plowing instead of herbicides, low yields, and hand harvesting to bring the purest expression of Nuits-Saint-Georges to the glass.
Vinification and maturation
The harvest for Nuits-Saint-Georges Les Allots 2021 is entirely hand-picked, with an initial selection in the vineyard to ensure only healthy, ripe bunches reach the fermenting cellar. Upon arrival, the grapes are rigorously sorted and, depending on the vintage, partially or completely destemmed to maintain the balance between freshness and structure. This is followed by a short cold maceration of approximately 3 to 4 days, a phase during which color and aromas are extracted from the skins without fermentation. The alcoholic fermentation itself is lengthy, typically around 25 to 28 days, with gentle pumping over and cap immersion to gradually extract tannins and flavors. The wine is then aged for approximately 14 to 16 months in oak barrels, using around 15 to 20% new wood to add depth without overpowering the fruit. Before bottling, it is only lightly filtered with white earth to preserve the structure as much as possible. In the challenging yet classic 2021 vintage, marked by night frost and low yields, this produced a Nuits-Saint-Georges with relatively modest alcohol, plenty of tension and a very precise expression of the terroir, ideal for lovers of elegant Côte de Nuits.

The structure is straight and energetic, with a mineral note and a long finish revealing black cherry, spice, and a hint of forest floor, demonstrating that this 2021 vintage both has charm now and offers considerable aging potential. Ideally, serve it at around 14-16°C in a generous Burgundy glass to allow the bouquet to fully unfold. At the table, it pairs beautifully with classically prepared lamb chops, sirloin steak, or Côte de Boeuf, but also with duck breast, poultry with mushrooms, and slow-cooked veal or beef stews. For cheese, semi-hard and soft washed-rind cheeses like Époisses or Langres are an excellent match for the spicy, earthy notes of this Nuits-Saint-Georges.
