As powerful and robust as a large black horse—that's what came to mind when we tasted this red Cabernet Sauvignon from Dark Horse. But the name Dark Horse is derived from the black horse that winemaker Beth Liston rides through the vineyards every day. Because, as she says, it all starts with perfectly maintaining the vineyards. Every day, hard work is done in the vineyards, in the heart of California, where the Cabernet Sauvignon vines are planted in the best spots. Thanks to abundant sunshine and the fresh mountain breeze, the grapes have a peaceful growing season. But winemaker Beth Liston is someone who loves innovation, innovative, and classic techniques, which is what makes this red wine truly shine.

When the Cabernet Sauvignon grapes reach their peak ripeness in the vineyard, they are harvested by hand. Each bunch is inspected to determine its suitability for this beautiful red Dark Horse. The juice that flows from the press is superb and already priceless. This beautiful juice is then aged for several months in oak barrels in the Dark Horse cellars. During this crucial period, the red wine develops its flavor, and the oak barrels give it its distinctive character. It develops unique aromas and flavors, and when it is perfect, the bottles are ready to be filled. However, the decision rests with the lady of the house, and thus we have "the Original Dark Horse."

The grapes come from the finest vineyards in California, and this is reflected in a full-bodied, powerful wine with its own unique character. Some of the wine is aged in oak barrels to develop more power. The aroma is full of power, with abundant blackberry and cherry fruit complemented by hints of nutmeg and mocha. The taste is truly beautiful, a candy, a gem, whatever you like. This Dark Horse Cabernet Sauvignon boasts flavors of black fruit, vanilla, toffee, spices, chocolate, and a hint of plum, but truly a wide variety of impressions. This wine is also so soft and rounded on the palate and finish—delicious!
