One of the most famous Spanish red wine grapes, it has been used to create many great wines. When the grapes are perfectly ripe, they are harvested mechanically in the early morning. This early harvest is important for the quality of the grapes. At this time of day, the skins haven't yet had to withstand much heat, making them stronger and less susceptible to bruising. Another reason is that the daytime heat could already cause the grapes to oxidize, which is obviously undesirable. Once the grapes arrive at the press, they are sorted on long sorting tables. Only the best bunches are selected for pressing. After vinification, this Spanish red wine matures for several months in the bottle in the Confidencia cellars for a beautiful finish.
