Château Ausone, named after the Roman poet Decimius Magnus Ausonius, has a rich history dating back to the 4th century. The Château Ausone vineyard covers just 7 hectares and is situated in a unique location with soil rich in clay and limestone. This blend gives the wines their characteristic minerality and finesse. The vineyard is planted with 55% Cabernet Franc and 45% Merlot, with vines that average 50 years old. The limited size of the vineyard allows for the utmost precision and care, resulting in wines of exceptional quality.Vinification
The grapes are harvested by hand and undergo strict selection to ensure only the finest fruit is used. Fermentation takes place in temperature-controlled wooden and stainless steel vats, followed by aging for 18 to 24 months in new French oak barrels.
