This blend consists of 85 percent Sangiovese Prugnolo Gentile, an indigenous grape known for its complex flavor profile. Boscarelli Sotto Casa Vino Nobile di Montepulciano Riserva is a wine originating from a vineyard with specific characteristics that contribute to its unique character. The vineyard where this wine is grown has a unique soil composition. The red, stony soil is of alluvial origin, meaning it comes from river and stream deposits. This soil offers excellent drainage and contains a rich mineral mix, which is beneficial for the vines' growth. The grapes are carefully harvested separately and brought to the winery. After destemming and crushing, they are fermented separately in oak barrels, each filled to no more than two-thirds of its capacity. Indigenous yeasts are used during the fermentation process, which lasts about a week at a controlled temperature of 28 to 30 degrees Celsius. After fermentation, each cultivar is aged separately in Slavonian or French oak barrels, where malolactic fermentation also takes place. Maturation lasts 28 to 32 months. At the end of the separate maturation, the final blend is created. Before release, Sotto Casa is aged in the bottle for a further few months to further develop and integrate.
