Ademan Adelia Verdejo – Fresh, headstrong and with depth

The Ademan Adelia Verdejo is a wine that starts fresh, yet still has something to say. Made from 100% Verdejo grapes from the Toro region, it's fermented in stainless steel and briefly aged on fine lees in new French oak barrels. The result is a Spanish white wine with crisp acidity, juicy fruit, and a surprisingly soft spiciness on the finish.

Vineyards and region: character from Adalia

The grapes grow on sandy, chalky soils around the village of Adalia, in the western part of the DO Toro. Here, warm, dry days and cool nights produce concentrated aromas while maintaining freshness. The altitude and poor soil give the wine its structure and tension.

Vinification and grape variety: Verdejo with finesse

Verdejo is already aromatic, but this version gains a special touch from aging on fine lees in new French oak barrels. This combination gives it a beautiful texture, some extra length, and a touch of softness without losing its fresh character.

Tasting notes: expressive and balanced

The nose immediately reveals citrus, fennel, and a hint of white flowers. The palate is vibrant, with juicy white fruit and fresh acidity, followed by a subtle spiciness and a soft bitterness typical of Verdejo. The oak is perfectly integrated and supports the wine without dominating.

Fact behind the label

The wine comes from Bodegas y Viñedos Maires, founded in 2015 by cousins ​​Fernando and Pablo. Their family has been making wine in the region for generations, but they give it a modern twist. Each label features a hand gesture that they believe reflects the wine's character. Adelia refers to the village where the story began, and this label is their playful interpretation of a Verdejo with flair.

Serving suggestion

This wine pairs wonderfully with shellfish, tapas, grilled fish, or as a refreshing aperitif. Serve it at around 8 to 10 degrees Celsius, and it will truly shine.
