The Monastrell grapes come from the sun-drenched vineyards of Jumilla. Thanks to the dry climate and limestone-rich soils, Monastrell ripens perfectly here, with great concentration and juiciness. That ripeness is crucial for non-alcoholic red wine, because the fruity character must be robust enough to stand its ground without alcohol.
The grapes are destemmed and fermented just like a classic red wine, with temperature control and short skin maceration to preserve color and aroma. After full fermentation, the wine is dealcoholized through a careful process that preserves the essence of the Monastrell.
