Ferrari's Brut Blanc de Blanc is, as the name suggests, made entirely from white grapes. The winery began planting Chardonnay grapes in the 20th century. This is unique in Italy, where previously only indigenous grape varieties were used. Meet Guilio Ferrari had a clear vision and wanted to work specifically with Chardonnay, as it is the king grape of the Champagne region. The grapes are carefully harvested at peak ripeness and rigorously sorted in the winery. The Ferrari Maximum undergoes a second fermentation in the bottle, known as the Méthode Traditionelle.
