The selected vineyards are located within the PDO Naoussa, in the northwest of the Greek region of Macedonia.
- Location / Origin: PDO Naoussa was officially established in 1971 and encompasses the city of Naoussa and several surrounding villages in Imathia. It is one of the historic areas for quality dry red wine in Northern Greece.
- Altitude & Exposure: The majority of the vineyards within the appellation lie at an altitude between 150 and 400 meters on the southeastern slopes of the Vermio Mountains. The combination of altitude, slope, and exposure contributes to even ripening and the preservation of vibrant acidity.
- Climate & Influences: Naoussa has a moderate Mediterranean climate with clear continental influences, cold winters, and relatively warm summers. These contrasts support the development of ripe fruit, structure, and fresh tension.
- Vineyard & Harvest: Cavino selects individual vineyard plots within Naoussa and harvests the grapes at the end of September.
Careful processing keeps the fruit bright while simultaneously building the characteristic structure of Naoussa.
- Harvest & Selection: Upon arrival, the grapes are precisely sorted for quality and handled with care, ensuring that only healthy and ripe material is processed.
- Fermentation: After destemming, the must remains in contact with the skins throughout the entire alcoholic fermentation. This allows color, aroma, and tannins to be gradually extracted; the subsequent malolactic conversion in stainless steel tanks further rounds off the acidity and structure.
- Aging: The wine undergoes an unoaked maturation. As a result, the red fruit, fine spiciness, and savory nuances remain clear and directly present.
PDO Naoussa is built entirely around one of the most characterful indigenous grapes of Greece.
- 100% Xinomavro – Naoussa: Xinomavro forms the entire basis and gives the wine its vibrant acidity, firm structure, and combination of red fruit with spicy and savory nuances. Within PDO Naoussa, the use of 100% Xinomavro is legally mandated.
