The origin forms the basis for both concentration and aromatic tension.
- Location and origin: The selected plots are located in San Marzano and Sava, in the heart of the DOP Primitivo di Manduria in Puglia.
- Vineyard: The Primitivo grows on traditional alberello vines at least 60 years old, with approximately 5,000 vines per hectare.
- Soil: Fine-grained loam soil with iron oxides in the red topsoil and a lime-rich, stony subsoil.
- Climate and influences: High temperatures, little rainfall and large differences between day and night temperatures promote both ripeness and aromatic tension.
A ripe harvest and precisely controlled fermentation build the powerful style step by step.
- Harvest and selection: The grapes are harvested by hand around mid-September when they have reached an advanced state of ripeness.
- Fermentation: After destemming and crushing, 24–48 hours of cold maceration follow at 8 °C. Fermentation with natural yeasts lasts approximately 10 days at 24–26 °C.
- Wood maturation: After malolactic conversion in stainless steel, the wine matures for 12 months in French and American oak, which adds spicy, toasted nuances.
This wine is made entirely from Primitivo, the grape that determines its concentrated fruit and full, soft structure.
