This full-bodied red wine showcases the warm, velvety side of Southern Italy's Puglia region. Ripe plums and red fruit are joined by notes of vanilla, coffee, and cocoa, while soft tannins round out the taste smoothly. The family estate of Pasqua combines its experience from Verona with fruit from Puglia, using a careful production process that supports the wine's richness from harvest onwards.
Its origin in the south of Italy forms the foundation for this bold, ripe style.
- Location / origin: The grapes come from Puglia, the vast region in the heel of the Italian boot. The wine carries the Puglia IGT designation of origin.
- Regional context: Situated between the Adriatic and Ionian Seas, Puglia experiences predominantly warm, dry summers. Ample sun and heat during the growing season allow for the harvesting of grapes with generous ripeness.
Pasqua builds the wine step by step, with cold maceration, controlled fermentation, and subsequent wood maturation.
- Harvest & processing: The grapes are hand-picked into 20 kg crates and quickly transported to the cellar, where they are destemmed and gently crushed. The small crates and rapid processing help minimize damage during transport.
- Maceration & fermentation: A one-week cold maceration precedes the alcoholic fermentation, which lasts approximately 15–20 days at 20–24 °C, with daily pumping over of the juice onto the skins to extract color and flavor compounds.
- Malolactic conversion & maturation: After fermentation, the wine is transferred to another tank, where the sharper malic acid is converted into softer lactic acid. It then matures for 6 months in oak, which adds spicy and toasted nuances and allows the flavors to further integrate.
The composition keeps the focus entirely on the character of Primitivo.
- 100% Primitivo – Puglia: Primitivo gives the wine a full body and a distinctly ripe fruit character. The grape variety is genetically the same as Zinfandel, which explains the 'ZIN' reference in the name.
