For this wine, Montresor uses Corvina, Molinara, and Rondinella grapes grown in the heart of Valpolicella, a DOC in northeastern Italy. The vineyard, called "Capitel della Crosara," provides the winemakers with a unique harvest, thanks in part to the climate. Warm summer afternoons and cool nights ensure a consistent harvest. The strong soil structure, where the deep roots are established, provides the plants with abundant nutrients. The result is vigorous and full bunches, all of which are harvested by hand. The drying process, for which Amarone wines are renowned, begins immediately after harvesting. The bunches are laid out in beds, and in special drying houses, they lose half their weight. The juice that remains after these months is highly concentrated and priceless. After fermentation, the wine is aged for three years in large vats of Slavonian wood and French barriques. The wine then rests in the bottle for another six months before being released.
All the grapes used for this Capitel della Crosara Amarone come from a single vineyard, the very best. This is why the label states "Monopolio Montresor."
