- Location / origin: The provinces of Lecce, Brindisi and Taranto in Salento, Puglia, Italy.
- Vines: The vines are 35 years old on average.
- Soil: The vineyards are located on clay and calcareous soil.
The winemaker combines careful fermentation with partial oak aging.
- Fermentation: Temperature control and aeration help preserve the fruit and soften the tannins. After skin contact, the wine is separated from the skins.
- Aging: A portion ages for four to five months in barriques, small wooden barrels. It is then blended with the portion that rested in stainless steel, so that fruit and wood come together.
