After careful selection, the grapes are transported under refrigerated conditions to Franschhoek and whole-pressed. Fermentation takes place in both used wooden barrels and concrete vats, followed by twelve months of maturation during which the yeast is regularly stirred, a process called "batonnage." This creates a creamy, smooth texture while preserving the fresh citrus notes and subtle oak influences.
