La Doncella de las Viñas Tempranillo is the organic red wine of Familia Conesa from the exclusive DO Pago Guijoso in Castilla La Mancha. What is a DO Pago? This is no ordinary designation, but one of the highest and rarest classifications in Spain, based not on a region but on a single estate with complete control from vineyard to bottling. This exceptional status immediately gives this wine a different significance. At the same time, it carries a romantic story: according to legend, a young woman, the "doncella," wandered among the vines singing her love verses. That image lives on today on the label and gives the wine a personal and historical character.

Vineyards and region

The Pago Guijoso estate is located in Spain, in Castilla La Mancha , at approximately 1,000 meters above sea level . This altitude determines the style of the wine.

  • Climate: Warm days ensure optimal ripening, cool nights preserve fresh acidity and aromatic tension.
  • Soil: Poor, well-draining soils force the roots to work deeply, which promotes concentration in the fruit.
  • Origin: Only grapes from this specific estate may bear the name DO Pago Guijoso.

Vinification and maturation

The vinification focuses on a balance between fruit and structure, followed by targeted wood and bottle maturation.

  • Wood aging: 6 months maturation in French oak barrels.
  • Bottle Maturation: Further bottle maturation adds additional spicy nuances, such as the estate's description of spice notes.
  • Style: The wood supports the fruit without dominating it, keeping the wine round and harmonious.

This combination gives the wine more depth than you would expect based on its price range.

100% Tempranillo from the Pago Guijoso estate. This grape is known for its structure, ripe red fruit, and subtle spiciness, enhanced here by altitude and controlled aging.

Tasting notes and serving suggestions

In the glass, the wine displays a deep cherry red color with purple hues. The nose is dominated by notes of blackberry and blackcurrant, complemented by subtle lactic notes and spicy nuances from the oak and bottle aging. On the palate, it is supple yet structured, with ripe fruit, soft tannins, and a fresh balance. The finish is harmonious with a hint of licorice.
