The Spanish Sherry from Valdespino

Valdespino is a true pioneer in the Sherry region. Sherry comes from the Andalusia region in the far southwest of Spain. Only the production around the city of Jerez is allowed to be called Sherry. The story begins in the mid-13th century, when 24 knights liberated the city of Jerez from the Moors. One of these knights, Don Alonso Valdespino, was given a large plot of land in Jerez in gratitude. This land has been the site of over 750 years of Valdespino Sherry production.

For example, Valdespino is the only winery to produce Single Vineyard Sherries, fermenting them exclusively in oak barrels. With Valdespino Vermouth, she's embarking on a new path: aperitifs. Vermouth blends Valdespino's classic Oloroso Sherry with natural ingredients. The process of infusing these aromas into the Sherry is called maceration.

Impressions of Valdespino Vermouth

A wide variety of natural ingredients are used to macerate Valdespino Vermouth. It's a blend of Very Old Oloroso Sherry and Moscatel. Chamomile, bitterwort, coriander, elderberry, cloves, Sivilla oranges, and juniper berries are added during the maceration process. As you can imagine, this Valdespino Vermouth boasts a wide aromatic palette.
