This fantastic quality is reserved only for the top wines of Valdespino. Isabela Cream is world-famous and is made from two grape varieties: Palomino Fino, which accounts for two-thirds, with an addition of Pedro Ximenez. Valdespino's vineyards are unique and located in the Pago Macharnudo Alto in Jerez de la Frontera. This wine region is considered a Grand Cru for Sherry wines. The grapes grown in the old vineyards enjoy a fantastic climate. While the sun always allows the harvest to ripen easily, the vineyards are also subject to strong ocean breezes. This constant wind brings freshness to the harvest, and the grapes retain their natural freshness. This also extends the ripening process, allowing the bunches to absorb everything from the centuries-old soil structure.

The old vineyard of Isabela Cream

The soil structure is crucial and contains a lot of white, chalky Albariza, for which the region is known. Once the harvest is ripe, all the bunches are harvested by hand. This Isabela Cream then undergoes a long aging process in the Valdespino cellars. The entire sherry undergoes oxidative aging for up to ten years, including at least five years spent in oak barrels. The solera system is used to achieve this full aroma and flavor.

What does Valdespino Isabela Cream taste like?

The long aging has given it a full and powerful flavor, which is evident upon pouring. The color is like mahogany at its darkest. The ripe aroma reveals many hints of ripe fruit, such as prunes, dates, and raisins. Swirl the glass vigorously, and you'll also taste hints of rich cocoa. The palate is exceptionally smooth with a thick, syrupy texture. The ripe and complex flavors captivate our senses. What a delicious sherry this Isabela Cream is.
