Once the grapes have reached their full ripeness, they are harvested at night, as this minimizes the risk of oxidation and damage to the bunches. The dew on the skins also contributes to the freshness of this rosé. But before this happens, the grapes are placed on sorting tables upon arrival at Les 5 Vallées. Only the finest bunches are selected for the press. The skins ferment for just twenty minutes to achieve the beautiful light pink color. The entire rosé is then aged for several months with its yeasts in steel vats. It develops peacefully and develops a fantastic flavor.
