This Governo Il Messo Toscano is made according to an old Tuscan tradition: Governo All'uso Toscano, in which part of the harvest is dried to give the wine more softness and power. It's meticulous work, because all the grapes are harvested by hand, and then a portion is placed on beds. This allows them to dry in peace, and a highly concentrated juice is created within the grapes. The dried bunches are later added to the remaining wine, and then you have something special, a true piece of Italian craftsmanship.
