The vineyards are situated at high altitude, allowing the grapes to enjoy a pleasant coolness, which we taste in this white wine. The soil in which the vines grow contains a high proportion of clay and limestone, which allows the fresh grape varieties to thrive in this soil. After a long ripening period, the grapes are carefully harvested in mid-late September. This always takes place early in the morning.
