At an altitude of 250 meters above sea level, we find the Los Chacayes vineyard, where the Malbec grapes are grown. The climate is temperate, with harsh winters and warm summers. When the grapes are fully ripe, they are harvested by hand in March and April. In the winery, a preferential maceration process follows for seven days. Fermentation also takes place for seven days in concrete tanks with indigenous yeasts. This is followed by malolactic fermentation, also in concrete tanks. Finally, the wine is aged in French oak barrels for 12 months. The wine is then bottled and matured for a further six months in the bottle before release.
