Ademan Valdecarretas Selección Especial, DO Toro

Ademan Valdecarretas is Toro at its fullest, a wine that combines old vines, pure concentration, and patient maturation into an intense and refined glass. Tinta de Toro from unimproved vines forms the core, with fruit from vineyards averaging 85 years old. The result is a powerful yet silky style, characterized by ripe red fruit, spices, and a long, layered finish.

Vineyards and region

The grapes come from unimproved vines with an average age of 85 years. What does unimproved vines mean in viticulture? These are vines on their own root system, not grafted onto rootstocks, which is rare in Europe and often adds extra authenticity to the flavor expression. This makes this cuvée extra special. Hand-harvested in small boxes and strict selection in the cellar ensure that only perfect fruit is fermented. In Toro, Tinta de Toro imparts natural structure, abundant color, and concentrated aromas. The combination of old plantings and careful fruit selection produces a wine with intensity and finesse.

Vinification and maturation

After arrival, a 48-hour cold maceration gently extracts color and aromas. Alcoholic fermentation is temperature-controlled, with three remontages per day for optimal extraction without harshness. Malolactic fermentation takes place in new French oak barrels, followed by a refined maturation in fine-grained French oak. The total maturation lasts up to 20 months, with 16 months spent in fine-grained French oak. This approach yields depth, silky tannins, and an elegant spiciness.

Grape composition

Tinta de Toro 100%. This local Tempranillo variety is known for its compact clusters, thick skins, and full aromatic profile. Historically beloved in Toro for its strength, color, and firm backbone, it can still be seductive even when young.

Tasting notes and serving suggestions

Ruby red with a cherry-red sheen. The nose reveals ripe red fruit and licorice, complemented by barrel-aged spices. Swirling reveals roasted and mineral notes. The palate is intense, powerful, yet silky, with rounded tannins, sweet accents, and a long, persistent finish. Serve at 14 to 16 degrees Celsius with red meat, game, and stews. Also pair it with dark chocolate desserts. Ages approximately 8 years under optimal conditions.
