The Gayda winery's biggest success is this Viognier. Its distinctive flavor profile is particularly striking. This wine has even won numerous awards. So, you're guaranteed to have a real gem in your hands with this Viognier. The vast majority of the grapes come from La Livinière, where the vines are deeply rooted in limestone soils. The rest of the grapes come from vineyards in Coteaux du Languedoc and Roussillon. This diversity adds an extra dimension to the wine, making it incredibly smooth and flavorful.

Tradition and innovation at the Gayda estate

In the picturesque village of Brugairolles, at the foot of the Pyrenees, lies the renowned Gayda winery. Surrounded by expansive vineyards, this estate is the result of a collaboration between owners Tim Ford and Anthony Record and the skilled winemaker Vincent Chansault. Since founding the winery in 2004, they have given the wines of their region a whole new dimension. While Domaine Gayda primarily focuses on traditional grape varieties, the cellar itself utilizes the latest equipment and technology. This harmonious combination of tradition and innovation is characteristic and distinctive of this Languedoc winery. Domaine Gayda's commitment to organic viticulture is driven by a deep respect for the natural environment and a dedication to producing wines of unparalleled quality.

Manual harvest for Gayda Collection Viognier

When the grapes are ripe, they are selectively harvested by hand. A rigorous selection process follows in the winery, followed by cold maceration in barrels. After pressing, the wine is transferred to stainless steel tanks where fermentation begins. Finally, the wine is aged for six months on its fine lees in oak barrels. The result is a pale gold wine with a lush aroma. The nose reveals notes of flowers, peach, apricot, and a hint of honey. The palate is full, smooth, and rich, with a balanced combination of fruity notes and refreshing acidity. This versatile Viognier pairs well with a variety of dishes. It pairs perfectly with grilled fish, poultry, shellfish, and light cheeses.
