The wine is a blend of several grape varieties, including 75 percent Scheurebe, 10 percent Welschriesing, 5 percent Grüner Veltliner, 5 percent Muskat Ottonel, and 5 percent Sauvignon Blanc. Each of these grape varieties contributes to the wine's unique flavor profile and adds its own distinct characteristics. The vinification process begins in the vineyard, where careful pruning and leafing are applied to ensure healthy vines and a moderate yield. Moderate defoliation ensures the grapes remain healthy and can ripen optimally until the desired botrytis, also known as noble rot, develops. This natural development of noble rot is essential for creating the concentrated sweetness and complex flavors in the grapes. After a careful, selective hand harvest, the whole grapes are slowly pressed to gently process the dried berries. The next stage involves the temperature-controlled fermentation of the grape juice. This process ensures a controlled and balanced fermentation, which helps preserve the sweetness and freshness in the wine. During fermentation, the wine is cooled and filtered to halt the fermentation.
