Cazes Winery is no ordinary winery in Roussillon. It's one of the oldest family-owned wineries that has managed to remain relevant to this day. From its founding in 1896 by Michel Cazes to his descendants who now run the winery, Cazes wines will always stand out. They have a distinctive character that appeals to many wine drinkers. With the Cazes Les Clos de Paulilles Collioure series, they have once again created a new style that our oenologists are very enthusiastic about.

The wines of Cazes

Cazes Winery is located in the central part of Roussillon, in the famous village of Rivesaltes – where the eponymous dessert wine became a sensation. The winery began with just 8 hectares, but this has since grown to a whopping 220 hectares. Its location is excellent thanks to the natural conditions. For Cazes Les Clos de Paulilles Collioure Rood, a trio of grapes was chosen: Grenache, Mourvedre, and Syrah. This trio is also known as GSM – a blend particularly popular with lovers of classic French wines.

Impressions of Cazes Les Clos de Paulilles Collioure Red

After the harvest, a lengthy process begins to create Cazes Les Clos de Paulilles Collioure Red. After sorting, crushing, and fermentation, the grape varieties are blended to emphasize their complexity. Finally, the juice is aged for 9 to 12 months in stainless steel and concrete vats. This gives Cazes Les Clos de Paulilles Collioure Red depth, along with minerality and freshness. Each grape variety clearly contributes to the taste. The fruity notes of sweet cherries and raspberries are evident, along with a touch of black pepper and hints of Mediterranean herbs. A thick, jammy texture develops on the palate. Because the grapes are grown on slate soil, Cazes Les Clos de Paulilles Collioure Red retains plenty of freshness.
