The vineyards benefit from their proximity to the Pyrenees.
- Location / origin: Somontano in Aragon, Northern Spain, at the foot of the Pyrenees.
- Soil: The region features calcareous and stony soils, in some places with sandy loam. The soil composition varies by plot.
- Climate & influences: Warm days and cooler nights help the grapes ripen gradually. The summer of 2021 was relatively mild and cool, which allowed for slow ripening.
Separate fermentation keeps the components apart during preparation.
- Fermentation: The grape varieties ferment separately in stainless steel tanks at 26 °C. This is followed by the conversion of sharper malic acids into softer lactic acids.
- Aging: 9 months in French and American oak. The wine then rests further in stainless steel tanks until bottling.
The blend combines a fruity base with extra firmness.
- Tempranillo – Somontano: Forms the base and provides ripe red fruit and a broad flavor.
- Cabernet sauvignon – Somontano: Enhances the structure and contributes to the tannins.
