The vineyard area covers the two communes of Vacqueyras and Sarrians, within the Vaucluse département, extending to the hills of the Dentelles de Montmirail. The soils are alluvium and terraced, of glacial origin, formed during the Riss period of the Quaternary era. The climate is hot and dry, with abundant sunshine, ideal for ripening the grapes.
After destemming and crushing the grapes, alcoholic fermentation takes place for fifteen days in closed tanks. To improve extraction, the juice is pumped over daily. Temperatures are controlled between 28 and 30 degrees Celsius. After draining and pressing, malolactic fermentation takes place in tanks. The wine is stored in tanks to preserve the fruity aromas. It is regularly pickled to naturally stabilize its components. The "Domaine des Genêts" cuvée is then bottled after aging, which can last up to twelve months.
Ruby red color with a beautiful sparkle. The nose offers complex aromas of ripe red fruit, black currant, and stone fruit, complemented by notes of licorice. This Delas Vacqueyras is characterized by a full, well-structured, harmonious, and powerful flavor. A long finish indicates the wine has excellent aging potential. An ideal wine for Provençal dishes, stews, and beef. It also pairs beautifully with any type of cheese.
