Weedenborn Sauvignon Blanc 2025

An expressive bouquet and a fresh, slightly saline taste immediately give this dry white wine from Rheinhessen a character all its own. Winemaker Gesine Roll has made it the hallmark of her Sauvignon expertise: carefully selected vineyard parcels come together in a wine where juiciness and precision complement each other beautifully. The relatively cool 2025 vintage places extra emphasis on floral refinement and lively citrus. Wonderfully energetic, with enough depth to remain captivating even after the first sip.

Vineyards and region

The higher-altitude plots offer cooling in one of Germany's most renowned wine-growing areas.

  • Location / origin: The grapes come from the area around Monzernheim and Westhofen, in the south of Rheinhessen. Monzernheim is situated above the famous vineyard slopes of Westhofen, which creates clear differences in aspect and ripening within a small area.

  • Soil: Calcareous soils characterize the vineyards around Westhofen. Selecting from various plots gives the wine a broader base of origin than a single vineyard would provide.

  • Altitude & climate: Around Monzernheim, the vineyards reach up to 280m above sea level. The open location and constant wind ensure relatively cool conditions, in which the grapes ripen gradually and retain their natural acidity.

  • 2025 Vintage: The growing season was relatively cool, with plenty of rainfall and significant temperature fluctuations. Careful vineyard work and attention to healthy grapes were therefore especially important.

Vinification and maturation

Every vineyard parcel receives individual treatment before the final wine is composed.

  • Harvest & selection: The picking time is determined per vineyard based on grape ripeness. This allows fresh aromas and sufficient flavor development to be precisely matched.

  • Vinification: Grapes from the various plots are processed and vinified separately, ensuring their individual characteristics remain available for the final selection.

  • Maturation / aging: The batches develop partly in oak barrels and partly in stainless steel tanks. This combination allows for both texture and clear fruit expression. The components are only blended shortly before bottling; up to 26 individual parcels can contribute to this cuvée.

The characteristic aromatic intensity is combined with a pronounced dry, refined structure.

  • Sauvignon Blanc – Rheinhessen: Sauvignon Blanc provides lively acidity and an expressive interplay of fresh fruit aromas and floral nuances. At Weedenborn, the focus is primarily on the balance between fragrance, juiciness, and a precise taste.

Tasting notes and serving tips

The nose opens with gooseberry, elderflower, and a subtle hint of grapefruit. On the palate, the wine is dry and juicy, with lively acidity and a refined mouthfeel. A mineral, slightly saline impression gives the fresh finish extra character.

  • Serving temperature: Serve at 8–10 °C so that the citrus remains lively and the floral aromas can unfold beautifully.

  • Dishes: Serve with goat cheese salad, asparagus with a light herb sauce, grilled prawns with lemon, or pan-fried white fish with fresh garden herbs. The fresh acidity pairs beautifully with these delicate and aromatic preparations.

The Sauvignon history of Weedenborn began with Udo Mattern, who discovered the grape variety in South Tyrol and subsequently planted it at the family estate. His daughter, Gesine Roll, developed that interest into a distinct specialty. She learned the trade at Bassermann-Jordan in the Pfalz and gained experience at Vergelegen in South Africa, where her interest in French-inspired wine styles also grew. Back in Monzernheim, she developed a recognizable signature of precision, finesse, and tension. This consistent approach earned her the title of Winemaker of the Year in the Falstaff Weinguide Deutschland 2024.
