Southbank Estate wines are part of a major New Zealand wine producer called Yealands. They produce wines in Marlborough, to be precise. The wines for the Southbank range come from vineyards near the Waihopai and Wairau Rivers. The climate here is dry and cool, with considerable temperature fluctuations between day and night. This results in fresh wines with a unique character. Southbank wines are all made with premium grapes. Quality is paramount, and this also means selective harvesting. They operate sustainably, and you'll regularly see sheep grazing among the vineyards. This reduces the need for mowing and nourishes the soil. The grapes are harvested at optimal ripeness. They are then taken almost immediately to the winery where maceration takes place for 12 hours, during which the grapes and skins are steeped. This is followed by temperature-controlled fermentation in stainless steel tanks. Finally, the wine is aged for several more months in the same stainless steel tanks.
