Redheads Studio is a project founded by British wine curator Tony Laithwaite in McLaren Vale, South Australia. RedHeads was a restaurant that Laithwaite transformed into a wine bar, winery, and small-batch production facility. He hired a group of talented "Barrel Monkeys," oenologists who worked manually at other vineyards, often left out of the winemaking process. This gave them the opportunity to showcase their talents and produce something truly precious. These wines are known for their excellent structure and value, a response to the common Australian "fruit bomb."
After harvest, the grapes are pressed immediately to preserve maximum freshness. Fermentation then takes place in oak barrels, some of which are new Hungarian oak. The wine undergoes malolactic fermentation, with weekly stirring of the yeast cells. This softens and rounds the wine. After fermentation, the wine is briefly aged in oak.
The result is a white wine with aromas of honeysuckle, toasted apple, and peach in this Blue Belle Chardonnay RedHeads. The palate is long and thick, with a lovely toasted, nutty character and abundant red apple, peach, and melon fruit.
