The grapes come from Spain, from Castilla La Mancha, from organic vineyards in the province of Cuenca. This region is located in the heart of Spain, where summers are hot and winters are cool, a climate very suitable for organic viticulture because mold has less of a chance. The Cabernet Sauvignon vines are about 10 years old and have adapted well to these conditions. The dry, sunny climate produces ripe grapes with abundant color and flavor, while the cooler nights preserve sufficient freshness in the wine.
The grapes for Punctum Nortesur Cabernet Sauvignon are harvested at night to ensure the fruit arrives cool in the cellar and better preserves its aromas. After harvesting, the grapes first undergo a cold maceration, during which the juice is not yet fermented but does absorb additional color and aroma from the skins. Fermentation then begins at a controlled temperature in stainless steel tanks, allowing the winemaker to precisely control the development of flavor and structure. The wine is aged entirely in stainless steel, without oak, emphasizing pure fruit, a supple structure, and the recognizable style of Cabernet Sauvignon from Castilla La Mancha. The alcohol content is around 13.5%, and the wine is sealed with a screw cap.
