The Grenache Blanc grapes for this wine come from two vineyards in the Agter-Paarl and Paardeberg regions. This grape variety is known for its stone fruit aromas and is a popular choice worldwide. Grenache Blanc thrives in dry climates and flourishes under dry conditions. The grapes are hand-harvested early in the morning, in mid-February. The average age of the vineyards is fourteen years. Due to the lack of irrigation, the vineyards are entirely dependent on winter rainfall. The soils consist of a combination of decomposed granite, sandstone, and Malmesbury shale. After harvesting, the grapes are destemmed in the winery. The grapes are then left to skin contact for two hours, during which the juice is extracted. Only the free-run juice is used, and great care is taken to clarify the juice before fermentation begins. Seventy percent of the wine is fermented in stainless steel tanks and aged for three months on the lees, while the remaining 30 percent is fermented and aged for six months in 500-liter French oak barrels.
