Paul Cluver is one of South Africa's finest winemakers, excelling particularly in his white wines. This Sauvignon Blanc, from the Elgin Appellation, is wonderfully fresh and crisp. This is thanks to the cool climate in which the grapes ripen. It offers fine acidity and a creamy mouthfeel.

Paul Cluver Winery, a true family business, is fully committed to producing world-class wines. Each one reflects the unique character of the cool-climate Elgin terroir. They are leaders in sustainable agriculture and pioneers in the Elgin appellation. It is a small wine region that was once apple growing country. The soil consists of shale and clay, which is excellent for aromatic grapes. Sauvignon Blanc, Pinot Noir, and Riesling grapes thrive here. Only the very best and ripest grapes are carefully harvested. The goal is to bring out the elegance, balance, and expression of the terroir. Therefore, the grapes are strictly controlled and sorted in the winery. The grapes are gently pressed and then undergo controlled fermentation in used wooden barrels. Finally, the wine is aged for another five months on the fine lees.
