The wine comes from Spain, from the Castilla-La Mancha region, within the Vino de la Tierra de Castilla appellation. The organic vineyards are located in the province of Cuenca, near the geographic heart of Spain. The vines are approximately 10 years old. The climate is characterized by hot summers and cool winters, conditions favorable to organic viticulture by limiting disease pressure. Dominio de Punctum is located in Las Pedroñeras, at the intersection of Cuenca, Ciudad Real, and Albacete. It was founded in 2005 by the Fernández Cifuentes family with a clear focus on sustainability and organic certification.
The grapes are harvested at night to preserve freshness and aromatic intensity. After harvest, they are cold-soaking, during which the juice briefly comes into contact with the skins at a low temperature to gently extract aromas. Fermentation takes place in stainless steel tanks at controlled temperatures. No wood is used, ensuring the Chardonnay's fruity character and refreshing style are preserved. Maturation also takes place in stainless steel tanks.
