Once all three grape varieties have been pressed and fermented, the blend for this Brut is created. This is an important task for the MVSA winemaker, and he takes his time. After much experimentation and tasting, the cava is born without bubbles. The bubbles are achieved using the Méthode Traditionelle, the same technique used for French Champagne.
