Le Vin Idéal Chardonnay de Limoux 2024
Limoux at its finest, with fruit from exceptional conditions and low yields. Hand-picked, fermented in French oak barrels, and aged on fine lees for a precise, layered style with length.
Vineyards and region
The grapes come from France, Languedoc, AOP Limoux. The cuvée is composed of the best plots: western plots on clay and limestone for finesse, northeastern vineyards with a slightly warmer influence for riper fruit, and higher-elevation plots in the Aude Valley where the coolness preserves tension and freshness. The result is ripe yellow fruit with a mineral character and a clear Limoux character.
Vinification and maturation
Strict selection at the sorting table. The must is fermented in French oak barrels, followed by malolactic fermentation. Daily bâtonnage nurtures the wine on its fine lees, adding texture without sacrificing freshness. Why choose low yields? Fewer bunches per vine yield greater concentration and precision in aroma and flavor. After 8 to 9 months of barrel aging, the balance between depth and tautness is precisely what the winemaker aims for.

Tasting notes and serving suggestions
Pale yellow with golden hues. Aromas of apricot, white peach, and grapefruit, subtly framed by a hint of honey and delicate vanilla. The palate is precise and minerally with plenty of definition in the mid-palate and a long, salty, refreshing finish. Serve around 12°C with creamy poultry dishes, rich fish, or grilled vegetables. Naturally, it also makes a delicious aperitif wine.
