High quality wines from the Argentine Kaiken

The Argentinian winery Kaiken was founded in 2002 by winemaker Aurelio Montes. They have three vineyards in Mendoza and one in Salta. These vineyards vary greatly in altitude and weather conditions, allowing Kaiken to cultivate a variety of grape varieties and produce beautiful, high-quality wines. The name Kaiken comes from the caiquen, a wild goose that crosses the Andes from Chile to Argentina. Montes often made the same flight, and because he regularly saw the geese flying back and forth, the name for the winery was quickly born. The grapes are harvested entirely by hand during the first two weeks of February. They are then transported in 10-kilo boxes to the winery. Here, the grapes are hand-selected before the vinification process begins. The grapes are pressed immediately, and fermentation with selected yeasts follows. The wine is bottle-fermented for 30 days and then aged with yeast for two years. This gives this Sparkling Brut more structure and complexity. The wine is then clarified and cold-stabilized before being bottled.
