The berries grow on clay soils, and the conditions are also perfect. Besides the terroir, the climate and vineyard layout also play a significant role in the character of the final wine. The blend consists of Viognier, Chardonnay, Vermentino, and Pecorino, each of which gives this Bianco its own unique signature.

A major player in the Italian wine market is undoubtedly Geografico. What began as a cooperative of several winegrowers and vineyards is now owned by the Piccini family. A key approach at this winery is that each vineyard is evaluated by a geologist and a vineyard specialist. Based on this evaluation, recommendations are made, including the best grape varieties to plant and the vineyard layout. A team of expert winemakers then further develops these recommendations, resulting in unique, high-quality wines. When the white grape varieties reach peak ripeness, they are harvested by hand. Quality is paramount, as only the very best is good enough. A strict selection process takes place in the winery, after which fermentation can begin. After fermentation, the grapes are blended to create the final wine. Finally, the wine is filtered and bottled.

As soon as we pour the Pavonero Bianco from Geografico, we can immediately enjoy a beautiful white-yellow wine in the glass. It immediately releases a wonderful aroma of white and yellow stone fruit, apple, peach, and other tropical fruits. We also detect a light hint of spice and a touch of honey. The palate is wonderfully fresh with a beautiful fruit concentration. Citrus notes provide a nice balance. The flavors continue into a pleasant finish. An excellent wine with grilled fish, shellfish, or poultry.
