Another flawless Chardonnay from Fevre, from the Chablis region where Fevre has built a strong reputation. And for good reason. They make the best of the best here. The grapes bask in the blazing sun on the region's most beautiful slopes, resulting in fresh and vibrant wines.

The best of Fevre

The Fevre family has been active in winemaking since the 19th century. The current vineyard is the result of the hard work of four generations. Nathalie and Gilles are currently at the helm and have 42 hectares of vines. They are both oenologists by training. Gilles focuses on working in the vineyards, while Nathalie is responsible for the vinification. Tradition plays a major role within this family and is passed down from generation to generation. They work with respect for nature, the vineyard, and the terroir. This wine comes from the Fourchaume Premier Cru vineyard in Chablis. The vines are planted in characteristic kimmeridgian soils with a mixture of clay, limestone, and fossil shells. This allows the Chardonnay grapes to develop unique characteristics. The vineyards are located on long slopes facing the sunrise, allowing the soil to warm up quickly, promoting high-quality ripening.

Manual harvest for Fevre Chablis 1er Cru Fourchaume

The harvest is carried out entirely by hand. The grapes are then carefully transported to the cellar, where vinification takes place by gravity. Low pressure is applied using the pneumatic method to gently separate the solids from the liquids. Fermentation takes place at a controlled temperature in stainless steel tanks. Finally, the wine is aged for 13 to 14 months, including 6 months on the fine lees, in oak barrels. As soon as we pour this Fevre Chablis, we're surprised by its distinctly fruity bouquet. Exotic notes of ripe mangoes and peaches emerge, complemented by softer citrus notes. On the palate, it's rich and juicy, offering great length. It's especially refreshing and lively thanks to the delightful minerality. The finish is full, robust, and lingering.
